


This set captures two moments from the same olive trees on the Reza plot of our Notis Estate.
Early Harvest was pressed in October from fruit picked at a maturity index of 1.2. Cold-pressed within 3 hours and malaxed for just 30 minutes, it preserves the sharp, green complexity of youthful Koroneiki olives. The result: a vivid, high-polyphenol oil with structure, spice, and grassy freshness.
Late Harvest is its later-season counterpart—harvested in January at full maturity. Cold-pressed the same day, this oil showcases the olive’s gentle side: smooth, round, and layered with sweet, nutty undertones. It brings subtle elegance and a softer intensity to your everyday cooking.
Together, these oils were designed to complement one another—a curated pairing of structure and silk, intensity and ease.
Both oils come from the Reza plot, a steep hillside with red, iron-rich clay layered over limestone. This distinct micro-terroir produces some of the most structured and expressive oils in Messenia.
The early harvest reflects the impact of dry conditions in October—concentrating antioxidants and producing a powerful, vivid oil. The late harvest benefited from more moisture and time, allowing for deeper ripening and the development of creamy, fruit-forward complexity.
From the same soil and the same trees, this DUO showcases how time alone can transform the olive’s expression.
