Avias Ranch is reshaping how extra virgin olive oil is grown, made, and understood. In a region where bulk production once dominated, we introduced a new model—one that celebrates terroir, prioritizes purity, and tracks quality at every step. Our groves are mapped by micro-plot, with each harvest guided by maturity index, polyphenol levels, and soil characteristics.

We press within hours. We measure polyphenols in real time. We batch-track every lot.
And for the first time in our area, producer notes are documented like a vintner’s log—charting rainfall, soil activity, and sensory profile with every release.

The result: not just exceptional olive oil, but a new culture of craftsmanship and traceability that’s raising the standard across the region. Each bottle comes with producer notes, maturity index, and soil expression. This isn’t a drizzle—it’s a declaration.

Grown to Regenerate

We farm in service of the land, not at its expense:

  • Dry farming across 80% of our groves means zero irrigation, reducing freshwater use by up to 3.5 million liters per year compared to conventional orchards.
  • Zero synthetic inputs (no chemical fertilizers, herbicides, or pesticides) preserves underground mycorrhizal networks and keeps pollinators and beneficial insects thriving—vital to long-term soil and ecosystem health.
  • Native cover cropping boosts carbon sequestration in the soil and improves water retention, reducing erosion and enhancing microbial life.
  • Grazing integration reduces fossil fuel emissions from mowing and supports biodiversity, naturally fertilizing the land.
  • Cover Crop planting of oregano, thyme, and lavender
  • Bee supers to help cover crop additional pollination

These practices help rebuild soil carbon, regenerate ecosystems, and protect the land for future generations.

Circular Thinking, Built In

We design for zero waste. Every byproduct becomes a resource:

  • 20 tons of pomace repurposed into high-fiber livestock feed—diverting organic waste from landfill and displacing commercial feed production.
  • 6.5 tons of olive pits converted into BBQ briquettes—recovering the energy equivalent of ~2,000 kg of propane and eliminating the need for fossil-based fuel.
  • 9 tons of trimmings and leaves composted—returning nutrients to the soil and reducing methane-producing waste.
  • 100% of olive wash water treated and reused—preventing groundwater contamination and reducing external water demand.

Every step reduces emissions, protects local ecosystems, and builds a fully circular system.

Our 2024 harvest cycle delivered real climate wins:

  • 7.4 metric tons of CO₂ emissions offset—equal to taking 1.6 passenger cars off the road for a year, driven by reuse of pomace, zero-input farming, and composting.
  • 28% fewer transport emissions by milling on-site and using solar-assisted equipment—removing dozens of long-haul diesel trips from the process.
  • 92% of total production waste recovered or repurposed—versus the industry average where most pomace is burned or dumped.
  •  +38% increase in pollinator species recorded on our groves post-cover cropping—essential for fruiting and ecological resilience.

Our model shows that small, smart interventions across the supply chain lead to outsized environmental gains.

At Avias Ranch, the story doesn’t begin with a label—it begins with the bottle itself. Every symbol etched into the glass is a quiet nod to our history, our values, and the land that shapes us. This isn’t just design. It’s a living language of Greek tradition, interpreted through the lens of a modern olive oil revolution.

At its heart stands the olive tree—bold, stylized, and unmistakably rooted. It’s not just the centerpiece of our design, but the soul of our story. This tree symbolizes life, resilience, and nourishment—offering fruit, shade, and connection across generations. This icon of our olive trees is surrounded by images of olive trees stretched across our land and their longevity, rootedness, and Greece's unbreakable relationship with the land.  Near it stands the amphora, an ancient vessel once used to store olive oil millennia ago. For us, it’s a symbol of continuity—what was precious then remains essential now.

In the midst of these trees, men and women are harvesting by hand—a tribute to the real people behind every bottle. These figures embody community, craftsmanship, and the respect we have for every step of the process. This is labor done with intention, not automation.

 


Above the grove, the sun shines with the constancy only Greece can offer—radiating warmth, ripeness, and life into every olive branch. It nourishes not just the trees, but the people who tend them. Beneath that same light, the arches of traditional Greek architecture rise in quiet harmony, grounding the scene in heritage. Higher still, you’ll find doves carrying olive branches—timeless symbols of peace, renewal, and balance in Greek tradition. On certain bottles, especially those from our Notis Estate or limited special editions, their

presence signals something more. These oils are not just expressions of the land—they're milestones. Whether marking a harvest of extraordinary purity, a tribute to heritage, or a sustainability breakthrough, the dove becomes our quiet emblem of intention. It also reflects our regenerative mission: transforming olive pomace into fuel and feed, restoring soil health, and closing the loop with purpose.
