I never set out to start a business for EVOO. What started as a return to our family’s groves became a mission: to elevate and share the exceptional quality of Greek EVOO—bringing science, sustainability, and soul to every bottle.

For years, I made EVOO from our family’s plots and simply shared it with friends and family. The rest we let other farmers from the area harvest and sell to larger firms who needed it to mix our high quality oil with their to meet the standards of EVOO. But it was those very people—the ones who tasted it and felt the difference—who encouraged me to bring our Notis EVOO to the American market. Not just because it tasted exceptional, but because it carried a story—honest, rooted, and easy to share. They told me there was nothing like it on the American market—so fresh, so pure, so full of character it was like “tasting the place” itself. They knew where it came from, how it was made, and why it mattered—and they believed I could carry it forward. Because I wasn’t just handing them olive oil—I was handing them something they trusted. And they knew I had the tools to bring that trust to others.

The deeper I looked, the clearer it became: even brands with beautiful marketing or Mediterranean themes often sell oils that aren’t what they claim to be. They simply buy bulk olive oils, mix it with all sorts of unknown quality or harvested EVOO, and then bottle it under their own label for resale. These oils weren’t traceable and certainly didn’t come from their own hands and their own land.

So I focused my efforts on creating an EVOO that is authentically Greek—vibrant, flavorful, aromatic, and rich in verified health benefits. Authentic. And ours. Something that we could scale up because we have the olive trees and still maintain the high quality standards as we did with small family/friend batches.

With decades spent in academic medicine, biotech, and building healthcare companies backed by venture capital, I knew the world of scale—the pressures of growth, investor returns, and moving fast. But I didn’t want this next chapter to be a reaction or reinvention. I saw a clear problem: too much olive oil is treated as a commodity, not the health-giving, heritage-rich ingredient, and experience it can be. And I realized I was uniquely positioned to do something about it—bringing together what I know best: science, family, and a commitment to doing things right.

In many ways, this oil reflects my own journey—bridging science and heritage, Greece and the U.S., old ways and new possibilities.

I sought to bring precision, consistency, and full transparency to every step of the process. And because we’re a family-run business with no outside investors, we’ve had the freedom to experiment—from our approach to soil care to our adoption of circular economy models that are zero-waste and environmentally responsible.

At Avias, we don’t buy oil. We make it.
We do everything ourselves. It’s hard work. But it matters. We know what’s going on from the day we harvest to the day it gets into your home.

From walking the groves to pressing the olives, I’m involved in every step—not just because I love it, but because it reflects who we are. Pride matters. My father-in-law, Notis built his business solely on insisting on the finest ingredients and detailed crafting. Process matters. And I want that care to show up in every bottle.

Our oils are grown on our ancestral Greek groves, but every decision is guided by clinical precision, environmental responsibility, and deep respect for what came before. We harvest early. We press within hours. We verify every batch for polyphenols and the full spectrum of compounds that make EVOO truly beneficial. When we compose our Founders Select from our groves, we do so with intention—adjusting omega-6 to omega-3 ratios to optimize health benefits, ensuring polyphenol levels remain high to deliver functional value, yet balanced enough to be approachable and enjoyable. And starting from the soil, we’ve learned how to naturally craft oils with these characteristics—like a winemaker with their vineyards.

But as we scaled up and began refining our process, I discovered something that reshaped my vision—something beyond the bottle. I was shocked to learn that for every ton of EVOO we produced, nearly six tons of olive pomace were left behind—waste that’s often burned or sent to landfills.

But as a scientist, I didn’t see waste. I saw potential. I saw nutrients. I saw a problem worth solving.

So I did what I’ve always done: I researched. I studied the biomass. I explored what remained—its antioxidant compounds, its energy potential, its capacity to be something more. And I saw a chance to challenge the status quo. A chance to build something better.

We began to reclaim and repurpose what had been overlooked. Pomace became clean-burning briquettes. Antioxidant-rich byproducts became nutritional supplements and nourishing soaps. Even the scraps went on to feed animals. These weren’t just byproducts—they became part of a full regenerative cycle. From soil to skin to soul.

And in doing so, we found a second mission: to prove that better is possible.

This is not a business backed by investors. It’s not a business built to chase margins. It’s backed by belief.

I answer to no one but the land, the science, and the people we serve. And to you.

At Avias Ranch, the story doesn’t begin with a label—it begins with the bottle itself. Every symbol etched into the glass is a quiet nod to our history, our values, and the land that shapes us. This isn’t just design. It’s a living language of Greek tradition, interpreted through the lens of a modern olive oil revolution.

At its heart stands the olive tree—bold, stylized, and unmistakably rooted. It’s not just the centerpiece of our design, but the soul of our story. This tree symbolizes life, resilience, and nourishment—offering fruit, shade, and connection across generations. This icon of our olive trees is surrounded by images of olive trees stretched across our land and their longevity, rootedness, and Greece's unbreakable relationship with the land.  Near it stands the amphora, an ancient vessel once used to store olive oil millennia ago. For us, it’s a symbol of continuity—what was precious then remains essential now.

In the midst of these trees, men and women are harvesting by hand—a tribute to the real people behind every bottle. These figures embody community, craftsmanship, and the respect we have for every step of the process. This is labor done with intention, not automation.

 


Above the grove, the sun shines with the constancy only Greece can offer—radiating warmth, ripeness, and life into every olive branch. It nourishes not just the trees, but the people who tend them. Beneath that same light, the arches of traditional Greek architecture rise in quiet harmony, grounding the scene in heritage. Together, they speak of a place where nature, culture, and daily ritual meet.


Higher still, you’ll find doves carrying olive branches—timeless symbols of peace, renewal, and balance in Greek tradition. On certain bottles, especially those from our Notis Estate or limited special editions, their

presence signals something more. These oils are not just expressions of the land—they're milestones. Whether marking a harvest of extraordinary purity, a tribute to heritage, or a sustainability breakthrough, the dove becomes our quiet emblem of intention. It also reflects our regenerative mission: transforming olive pomace into fuel and feed, restoring soil health, and closing the loop with purpose.
