The Founder's Selection captures the season’s two defining moments—early and late harvests—shaped by the distinct terroirs of Notis and Rema Mili.
From the steep red soils of Notis comes a vibrant, grassy oil—peppery and rich in green apple, with 396 mg/kg polyphenols and powerful antioxidant compounds like oleocanthal and Vitamin E. Swift milling locks in its intensity.
From the riverside groves of Rema Mili, a smoother, fuller oil emerges—softer on the palate, with notes of ripe olive, almond, and herb, and 296 mg/kg polyphenols in a naturally balanced omega profile.
