Avias Ranch isn’t just where we make olive oil. It’s where generations of knowledge, care, and science come together to challenge the status quo.

For over 300 years, our family’s groves have flourished in the iron-rich clay and limestone soils of southern Greece. Handed down through generations, these lands carry deep tradition. Our grandfather, Notis Karavitis, left his village at 15 and opened one of Greece’s most beloved patisseries at 16—known for its unwavering quality and ingredient purity.

While the family branched into medicine and science, the olive groves remained. For years, the oil was shared only with friends and family—until their consistent praise inspired something bigger. Avias Ranch was born from that encouragement, rooted in heritage, but driven to do things differently.

We began as our ancestors did—stone-milled cold pressing—but soon began experimenting. We tested everything: soil microbes, olive genetics, harvest timing, and the chemistry of flavor and health. We studied the biophenols, the omega 6:3 ratios, the volatile aromatics. And then we started crafting oils not just by taste, but with purpose—bottling the vitality of the fruit at its peak and preserving it through meticulous handling, bottling, and sealing. We built our system around integrity and intention.

Estate-Grown. Authentic. Unmatched.

Unlike many brands that source and repackage bulk oil, every Avias Ranch olive oil is estate-grown and terroir-specific. We don’t source from third parties.  Our Notis Estate spans 86 acres across four distinct plots—Reza, Potami, Xrisafi, and Perivoli—each named for the land itself. These plots are harvested and blended like a vintner blends wine. We test each batch for polyphenols, vitamin E, fatty acid profiles, and aromatic compounds. We know the exact number of olives that go into every bottle.

Some years, the Notis Estate Early Harvest is bold and peppery—crafted from green

olives at a maturity index of 0.6, with polyphenol levels at 330 mg/kg and a 5:1 Omega-6 to Omega-3 ratio. Other times, we let the fruit ripen longer—like our Notis Estate Family Reserve Late Harvest (Blue),  yielding a rounder, softer oil with creamy notes of ripe pear, almond, and walnut.

On the Rema Mili Estate, which hugs the edge of the Rema Mili river, the oils are naturally smoother and more mellow, thanks to the river-fed soils and gentler microclimate. Our Rema Mili Late Harvest Reserve is subtle but layered—silky on the palate, still heart-healthy, and rich in vitamin E and polyphenols.

Crafted Like a Vintage. Built for Wellness.

While our estate is large enough to produce EVOO at the scale of major commercial producers, we choose a different path. We don’t mass-produce. Each blend is intentional. Each release—whether a Family Reserve, or Founder's Selection—is very limited and finite and composed to express that season’s best.

Our process is scientific: high oleocanthal and oleacein levels for anti-inflammatory benefits, precision blending for optimal omega ratios, and sensory profiles validated by expert panels. Our freshness indicators—acidity, DAGs, peroxide, and K-values—are meticulously tracked. We even test post-24 months to ensure they still meet extra virgin standards.

Because olive oil isn’t just a condiment—it’s a living product. It should be made like it matters.

The Science of Quality

Most brands don’t grow their olives, don’t test their batches, and don’t even know where their oil comes from. At Avias Ranch, we do it all—because that’s what authenticity demands.

We study our trees, our soil, and our fruit with the same care a scientist brings to the lab. We know the exact maturity of our olives before harvesting through near-infrared

spectroscopy. We evaluate the soil’s health using microbiology and mineral testing. We use gas chromatography and mass spectrometry to analyze our oils' chemistry, flavor, and antioxidant profiles.

We’ve innovated every step—from the way we harvest, to how quickly we press (under 3 hours), to how we settle and store oils in oxygen-free stainless steel tanks, and even how we bottle using argon gas instead of nitrogen. Our oils are housed in glass, not plastic, because it protects better. Our testing protocols—at harvest, at bottling, and over time—ensure our oils are not only certified extra virgin, but measurably superior.

This isn’t just about being better than the standard. It’s about building trust. Our transparency gives you the confidence that you’re choosing olive oil that’s not only delicious, but also backed by data and built for wellness.

At Avias Ranch, the story doesn’t begin with a label—it begins with the bottle itself. Every symbol etched into the glass is a quiet nod to our history, our values, and the land that shapes us. This isn’t just design. It’s a living language of Greek tradition, interpreted through the lens of a modern olive oil revolution.

At its heart stands the olive tree—bold, stylized, and unmistakably rooted. It’s not just the centerpiece of our design, but the soul of our story. This tree symbolizes life, resilience, and nourishment—offering fruit, shade, and connection across generations. This icon of our olive trees is surrounded by images of olive trees stretched across our land and their longevity, rootedness, and Greece's unbreakable relationship with the land.  Near it stands the amphora, an ancient vessel once used to store olive oil millennia ago. For us, it’s a symbol of continuity—what was precious then remains essential now.

In the midst of these trees, men and women are harvesting by hand—a tribute to the real people behind every bottle. These figures embody community, craftsmanship, and the respect we have for every step of the process. This is labor done with intention, not automation.

 


Above the grove, the sun shines with the constancy only Greece can offer—radiating warmth, ripeness, and life into every olive branch. It nourishes not just the trees, but the people who tend them. Beneath that same light, the arches of traditional Greek architecture rise in quiet harmony, grounding the scene in heritage. Together, they speak of a place where nature, culture, and daily ritual meet.


Higher still, you’ll find doves carrying olive branches—timeless symbols of peace, renewal, and balance in Greek tradition. On certain bottles, especially those from our Notis Estate or limited special editions, their

presence signals something more. These oils are not just expressions of the land—they're milestones. Whether marking a harvest of extraordinary purity, a tribute to heritage, or a sustainability breakthrough, the dove becomes our quiet emblem of intention. It also reflects our regenerative mission: transforming olive pomace into fuel and feed, restoring soil health, and closing the loop with purpose.
