Where Generations of Care Meet a New Chapter

This land has been in our family for over 300 years, and every year, olives from these groves have been pressed into oil—a tradition as steady as the seasons themselves. When Notis, my father-in-law, was just sixteen, he left the village near these groves and opened his first store in the big city. For more than 65 years, he built one of the most respected stores in Europe, known for its quality and craftsmanship. His EVOO—pressed each November from these same family trees—was no exception.

I never set out to make olive oil myself. But when Notis passed, I became the one the family turned to—the one "appointed" to carry forward the tradition of making our estate EVOO for family and friends. It wasn’t something I planned; it was something I accepted with care and pride.

For decades, my work had been in a very different world—academic medicine, building healthcare companies, creating systems to help people take control of their health. But eventually, I turned my attention here—to this land, these groves, this legacy. What started as a way to honor a family harvest grew into something much bigger: preserving the land, the quality, and the trust that Notis lived by. And I was absolutely captivated by the land and its beauty.

As I deepened my work, I realized something else: there was nothing quite like this in the American market. I wanted to bring something different—an olive oil rooted in authenticity, true quality, and the kind of real, traceable craftsmanship that was missing from most shelves.

Today, Avias Ranch stands as a continuation of that spirit—rooted in family, strengthened by science, and shared with all who can taste the difference.

Where Our Design Becomes a Living Story

At Avias Ranch, the story doesn’t begin with a label—it begins with the bottle itself. Every symbol etched into the glass is a quiet nod to our history, our values, and the land that shapes us. This isn’t just design. It’s a living language of Greek tradition, interpreted through the lens of a modern olive oil revolution.

At its heart stands the olive tree—bold, stylized, and unmistakably rooted. It’s not just the centerpiece of our design, but the soul of our story. This tree symbolizes life, resilience, and nourishment—offering fruit, shade, and connection across generations. This icon of our olive trees is surrounded by images of olive trees stretched across our land and their longevity, rootedness, and Greece's unbreakable relationship with the land.  Near it stands the amphora, an ancient vessel once used to store olive oil millennia ago. For us, it’s a symbol of continuity—what was precious then remains essential now.

In the midst of these trees, men and women are harvesting by hand—a tribute to the real people behind every bottle. These figures embody community, craftsmanship, and the respect we have for every step of the process. This is labor done with intention, not automation.

 


Above the grove, the sun shines with the constancy only Greece can offer—radiating warmth, ripeness, and life into every olive branch. It nourishes not just the trees, but the people who tend them. Beneath that same light, the arches of traditional Greek architecture rise in quiet harmony, grounding the scene in heritage. Together, they speak of a place where nature, culture, and daily ritual meet.


Higher still, you’ll find doves carrying olive branches—timeless symbols of peace, renewal, and balance in Greek tradition. On certain bottles, especially those from our Notis Estate or limited special editions, their

presence signals something more. These oils are not just expressions of the land—they're milestones. Whether marking a harvest of extraordinary purity, a tribute to heritage, or a sustainability breakthrough, the dove becomes our quiet emblem of intention. It also reflects our regenerative mission: transforming olive pomace into fuel and feed, restoring soil health, and closing the loop with purpose.


Etched near the base, a plate of fish reminds us that olive oil’s story doesn’t end at harvest—it continues at the table. This is a nod to Greece’s deep connection to the sea, and to the meals shared with laughter, music, and family. Olive oil

isn’t just a product here; it’s a finishing touch, a daily ritual, a bridge between land and sea.

Together, these symbols tell a complete story—from land to bottle, from mythology to modernity. And they aren’t just poetic—they’re backed by precision. Each bottle reflects the rigor behind the beauty: high polyphenol content, ultra-low acidity, and a naturally balanced omega-6 to omega-3 ratio. These aren’t claims. They’re measured.

Our bottle isn’t just beautiful. It’s honest. It reflects everything we stand for: rooted tradition, radical transparency, and a deep respect for what olive oil can be.
