Extra Virgin Olive Oil. It’s the highest grade of olive oil, made from pure, cold-pressed olives with no defects or chemical treatments.
EVOO must meet strict chemical and sensory standards. It’s made without heat or solvents, which preserves antioxidants like polyphenols and ensures low acidity (under 0.8%).
Polyphenols are natural antioxidants found in olives. They’re responsible for EVOO’s peppery bite—and its health benefits. Our early harvest oils are especially rich in polyphenols like oleocanthal and oleacein.
Extra virgin olive oil is the highest-quality olive oil, made from the first cold pressing of fresh olives. It must have low acidity and no chemical processing—resulting in a pure, flavorful oil rich in nutrients and antioxidants.

Yes. Many supermarket “extra virgin” oils are diluted or mislabeled. That’s why we share our full chemistry reports and trace every bottle back to the plot it came from.
Look for harvest dates, polyphenol levels, low acidity (under 0.3%), and estate origin. You should feel the pepperiness in the back of your throat—that’s the polyphenols talking. But to know if its been adulterated-stick it in the fridge-it it gels then its EVOO.
For peak flavor and benefits, use your oil within 2–3 months of opening. Store it in a cool, dark place, tightly sealed.
