Our grandfather, Notis Karavitis, left his village at 15. By 16, he had opened one of Greece’s most respected patisseries—built on a simple philosophy that we carry forward today: quality starts with care, and care starts with the source. His standards, his work ethic, and his deep respect for ingredients became the foundation for everything that came after.
Over time, as our family branched out into science, medicine, and new countries, the groves remained—producing oil that often ended up improving others’ blends so they could meet extra virgin standards. But we knew it deserved more. The land deserved more.

No matter how far we moved from Greece, November always brought us back. It was harvest time—an unspoken invitation for the family to return to the groves. We’d walk the land, pick the olives, and press the year’s batch together. The oil we made wasn't just for ourselves. We bottled it up and gave it to friends, neighbors, and anyone who sat at our table.
