

Crafted entirely in-house, the Notis Early Harvest Founder's Selection is the result of meticulous tasting, testing, and blending. We harvested olives at a maturity index of 0.6–1.2 and cold-extracted them within hours to preserve their vivid character.
The final olive blend—80% Reza and Xrisafi, 20% Potami and Perivoli— is an emerald-hued, grassy, green apple-forward EVOO with a peppery finish and zero sensory defects. Its structured palate offers a fruitiness of 4.52, bitterness of 3.3, and pungency of 4.3—making it ideal for raw use or finishing bold dishes. Every decision, from grove to bottle, was made to showcase harmony, texture, and vitality.
The Notis Estate Early Harvest Reserve Blend is born from four distinct plots across our 86-acre estate in southern Greece—Reza, Xrisafi, Potami, and Perivoli. Each micro-terroir contributes a unique layer to the oil’s profile: Reza’s red, iron-rich soils bring structure and phenolic depth; Xrisafi’s elevation intensifies green notes; Potami’s clay softens the edges; and Perivoli lends aromatic lift.
With olive trees over 300 years old rooted in calcareous red soils, the land itself is a mosaic of complexity. Harvested early in October during a year of intense heat and drought, the fruit was concentrated, clean, and exceptionally healthy—delivering a vivid, layered oil that reflects both place and season.
Health Analysis
This oil was engineered for both flavor and function.

This blend delivers potent health benefits. Nutritional quality is further supported by a 5.3:1 omega-6 to omega-3 ratio, 74.83% oleic acid, and 389 mg/kg of vitamin E. Low acidity (0.16%) and a peroxide value of 2.7 confirm its freshness and stability. Additional markers—K270 (0.16), K232 (1.73), and PPP (0.22)—underscore its purity and adherence to International Olive Council standards.
This EVOO is grown—like all of our olives—using regenerative farming, native cover crops, and no-till practices. Every liter of Notis Early Harvest Reserve removes over 14.8 kg of CO₂ from the atmosphere.
In 2024, the estate produced 23.8 tons of olive pomace, which was fully repurposed into clean-burning briquettes, livestock feed, antioxidant-rich soaps, and renewable biofuel. Nutrients like polyphenols, protein, fiber, and essential minerals were recovered from byproducts that would otherwise be discarded. This isn’t just a sustainable oil—it’s a closed-loop, carbon-negative product rooted in living soil and forward-thinking stewardship.
