Harvested at a maturity index of 5, Notis Estate Family Reserve is cold-pressed from the same trees as our early—but months later, when the fruit has softened and deepened. The result is a smooth, well composed EVOO with ripe pear, sweet almond, buttery walnut and lingering finish.
With low bitterness and gentle spice, it’s balanced and understated—crafted for those who value nuance over intensity. Pressed in small batches, it’s our most elegant, all-purpose oil.
Notis Estate Family Reserve is a single-origin EVOO from the Reza plot of our Notis Estate—where steep slopes and iron-rich red clay produce deeply flavorful oils. Though it shares the same terrain as our early edition, this variety is harvested months later, in January, allowing the olives to ripen fully under winter’s softer light.
This maturity, combined with the rugged hillside terroir, produces an oil with rich aromatics and quiet complexity.

This EVOO is grown—like all of our olives—using regenerative farming, native cover crops, and no-till practices. Every liter of Notis Early Harvest Reserve removes over 14.8 kg of CO₂ from the atmosphere.
In 2024, the estate produced 23.8 tons of olive pomace, which was fully repurposed into clean-burning briquettes, livestock feed, antioxidant-rich soaps, and renewable biofuel. Nutrients like polyphenols, protein, fiber, and essential minerals were recovered from byproducts that would otherwise be discarded. This isn’t just a sustainable oil—it’s a closed-loop, carbon-negative product rooted in living soil and forward-thinking stewardship.
