expressions of Koroneiki olives harvested months apart from two dramatically different terrains.
The Notis Early Harvest Blend (2024 vintage) was pressed from fruit picked at a maturity index of 0.6–1.2. With a 45-minute malaxation time and immediate cold extraction, the result is a bold, green, and structured oil with crisp bitterness and a peppery finish.
The Rema Mili Late Harvest (2025 vintage), harvested in January at a maturity index of 5, was milled within 4 hours to preserve its delicate nuances. The result is a smoother, rounder oil with lucent green color, ripe fruit aromas, and a soft, lingering spice.
Together, these oils showcase the full spectrum of flavor, from youthful sharpness to late-season depth.
The NotisEstate lies high in the hills of southern Greece, where steep slopes and red, iron-rich soils shape oils with bold character and elevated polyphenol content. Harvested during a dry, early October window, the fruit was small, concentrated, and intensely green.
In contrast, the Rema Mili Estate spans 103 acres along the riverbanks of this river. Late-season rains and deep, moisture-retaining soils allowed for full fruit maturation, producing a golden oil with rounded complexity and a smooth, composed profile.

The Notis Estate harvest yielded just 1,254 kg of oil from 1,822 trees, using 20.7 kg of early-harvest olives per 500 mL bottle.
The Rema Mili Estate, harvested later,
produced 2,115 kg of oil from 2,664 trees, requiring 5.21 kg of late-harvest olives per bottle.
Both groves operate with zero-waste
systems—repurposing olive byproducts into clean-burning briquettes, natural soaps, livestock feed, and biofuel. Every bottle is carbon-negative, sequestering more CO₂ than it emits, and crafted without additives, dilution, or compromise.
