This early-harvest EVOO was crafted from Koroneiki olives hand-picked at a maturity index of 1.2 and cold-pressed within 3 hours of harvest. Milled with a short 30-minute malaxation window, the process preserved the volatile aromatic compounds that give this oil its fresh-cut character.
Born from a challenging, rainless season, this oil carries the bold, structured personality of early harvest fruit—sharp, green, and full of life. From grove to bottle, every step was made with one goal: to capture the olive’s most vivid and potent expression.
The Reza plot of our Notis Estate lies on a steep hillside composed of red, iron-rich clay over limestone—one of the most expressive micro-terroirs in Messenia. This rugged landscape produces structured oils with naturally high phenolic content.
Harvested in early October during a drought year, the olives from Reza delivered remarkable clarity, intensity, and aromatic lift. The result is a vibrant oil defined by its land: bold, mineral-driven, and unapologetically green.

This small-batch oil was harvested from just 1,822 trees, yielding 1,254 kg of oil from 39.4 tons of olives. With a yield of only 2.48%, this low-output harvest prioritized quality over quantity, ensuring high concentration of nutrients and purity.
Crafted under a zero-waste philosophy, the olive byproducts from this harvest were repurposed into natural soaps, livestock feed, and clean-burning fuel—preserving the full value of the fruit. Each 500 mL bottle contains the essence of 20.7 kg of early-harvest olives, reflecting both ecological care and culinary integrity.
