Estate-Grown, Terroir-Crafted Olive Oils
Avias Ranch spans 77 hectares of 300+ year-old Koroneiki olive trees across two estates: Notis Estate (35 ha, Orovas, Greece) and Rema Mili Estate (42 ha, along the Rema Mili River). The Notis Estate, made up of four distinct plots—Reza, Potami, Xrisafi, and Perivoli—features terra rosa and clay-rich silty soils, producing vibrant, high-polyphenol oils. In contrast, Rema Mili’s river-fed microclimate yields smoother, well-balanced oils with floral and nutty notes.
For 2025, we crafted four distinct extra virgin olive oils from the Notis and Rema Mili Estates, shaped by a season of extremes. Early harvest olives, picked after a dry summer, matured faster (maturity index 1.2 vs. 0.6 in 2024), while late harvest olives, collected after heavy January rains, developed richness and depth. As estate producers, we took a bold, science-driven approach—blending the best attributes of diverse Notis Estate plots for balance and complexity while showcasing the pure terroir expressions of Rema Mili and maturation of early and late oils within the Reza terroir. The result is a collection that pushes the boundaries of tradition, capturing the unique interplay of land, climate, and time.

Quick Comparison of Our Early and Late Harvest Extra Virgin Oils

1. What's the Real Difference Between Early and Late Harvest Olive Oils?
Early harvest oils are made from unripe, green olives and have a vibrant green color, a bold grassy aroma, and a strong peppery flavor. They are high in polyphenols and cis-3-hexenal, which contribute to their robust health benefits and distinctive taste. Late harvest oils, made from fully ripened olives, have a golden hue, a milder, buttery flavor, and a softer, more floral aroma, with lower polyphenol levels.
2. Why Does Timing Matter So Much in Olive Oil Harvesting?
The timing of the olive harvest greatly affects both yield and flavor. Early harvest oils have a lower yield but higher quality with intense flavors and health benefits due to their higher polyphenol content. Late harvest oils yield more but are milder in flavor with less bitterness and pungency, making them more versatile in cooking.
3. How Do the Flavors and Aromas Differ Between Early and Late Harvest Oils?
Early harvest olive oil has a bold, grassy flavor with a strong peppery finish, while late harvest oil offers a softer, smoother, and more buttery taste with floral and fruity notes. The aroma of early harvest oil is more intense and vibrant, with notes of green apple and fresh herbs, while late harvest oil has a sweeter, milder aroma with hints of melon and banana.
4. Is Early Harvest Olive Oil a Healthier Choice?
Early harvest oil is rich in polyphenols and oleocanthal, which provide anti-inflammatory and antioxidant benefits. These compounds help reduce inflammation, protect the heart, and even offer potential protection against diseases like Alzheimer’s. The high antioxidant content also means it’s better for reducing oxidative stress and aging. Late harvest oils are more balanced across the health spectrum. Our mass spectrometry profiles, the only method that can show oleocanthal quantitatively, show high quantities of oleocanthal.
5. Is Late Harvest Olive Oil Still Good for My Health?
Yes, late harvest oil still contains a balanced amount of healthy fats and moderate antioxidants. While it has a milder flavor and fewer polyphenols than early harvest oil, it is still a nutritious choice for those looking to enjoy a softer taste with health benefits.
6. Why is Early Harvest Olive Oil More Expensive?
Early harvest oil is made from green olives that yield less oil, making it more costly to produce. However, it is also packed with more nutrients and offers a stronger flavor profile, making it a premium choice for those seeking both taste and health benefits.
7. What Are the Benefits of Using Early Harvest Olive Oil in Cooking?
Early harvest oil’s bold flavor and high antioxidant content make it ideal for finishing dishes like salads, grilled meats, and vegetables. It adds a distinctive taste and a healthy boost to any meal, enhancing both flavor and nutrition.
