Avias Ranch spans 77 hectares of 300+ year-old Koroneiki olive trees across two estates: Notis Estate (35 ha, Orovas, Greece) and Rema Mili Estate (42 ha, along the Rema Mili River). The Notis Estate, made up of four distinct plots—Reza, Potami, Xrisafi, and Perivoli—features terra rosa and clay-rich silty soils, producing vibrant, high-polyphenol oils. In contrast, Rema Mili’s river-fed microclimate yields smoother, well-balanced oils with floral and nutty notes.

For 2025, we crafted four distinct extra virgin olive oils from the Notis and Rema Mili Estates, shaped by a season of extremes. Early harvest olives, picked after a dry summer, matured faster (maturity index 1.2 vs. 0.6 in 2024), while late harvest olives, collected after heavy January rains, developed richness and depth. As estate producers, we took a bold, science-driven approach—blending the best attributes of diverse Notis Estate plots for balance and complexity while showcasing the pure terroir expressions of Rema Mili and maturation of early and late oils within the Reza terroir. The result is a collection that pushes the boundaries of tradition, capturing the unique interplay of land, climate, and time.

Avias Ranch Notis Estate Early Harvest Reserve Blend

As Estate Producers, we crafted this oil by selecting, balancing, and shaping the final blend from all plots across Notis Estate. Each plot—Reza, Potami, Xrisafi, and Perivoli—brought unique characteristics to the harvest, from bold polyphenol intensity to softer, fruitier notes. By carefully blending these elements, we created an oil that is both structured and harmonious. Harvested at a maturity index of 1.2, this EVOO retains a 330 mg/kg polyphenol count and a 5:1 Omega-6 to Omega-3 ratio, delivering a perfect balance of antioxidant richness and everyday versatility. It offers the health benefits of high-polyphenol olive oil yet remains approachable smooth, layered, and enjoyable. Tasting Notes: Vibrant, grassy, structured with a peppery finish.

Notis Estate Grand Cru

A smooth, well-rounded EVOO crafted from all 4 plots of the Notis Estate as a later harvest at Notis Estate. Less peppery than early harvest oils but more structured than buttery late harvests, this is the perfect all-purpose EVOO for any kitchen. Harvested later in the season from a blend of plots across Notis Estate, this EVOO balances fruitiness, structure, and smoothness, making it an all-purpose olive oil for both finishing and cooking. Unlike early harvest oils, which develop strong bitterness from stressed trees, these olives benefit from longer ripening time and slightly deeper soil moisture, allowing them to produce a richer, more rounded oil. The result is an EVOO that sits between intense early harvests and buttery late harvests, offering a medium-bodied mouthfeel with a fruity, well-balanced finish.
