Cultivated in Xrisafi and Perivoli, thyme reflects its environment: bold and resinous in the sun-drenched clay of Xrisafi, more delicate and floral on the breezy terraces of Perivoli.
Floral and savory with peppery hints, thyme adds depth to roasted vegetables, slow braises, and breads. Activate its essential oils by crumbling gently just before use.
Hand-harvested in early May before flowering, we trim only the upper halves of each plant to ensure continued growth. Air-dried in the shade, the leaves retain their full volatile oil profile.
Rich in thymol, carvacrol, and rosmarinic acid, thyme offers antioxidant, anti-inflammatory, and antimicrobial benefits. It supports immune health and may aid gut and skin balance.
