How Science Helps Us Rethink Olive Oil-and Food
Restoring trust, rebuilding soil, and reimagining food—one harvest at a time.
Most food systems today are built to extract: more yield, more uniformity, more speed.
But faster doesn't always mean better. And more doesn't always mean healthier.
At Avias Ranch, we use science to design something different—a circular, regenerative food system that starts with olive oil but reimagines everything it touches. From the microbes beneath our soil to the polyphenols in every bottle, we measure what matters, we farm what restores, and we craft oils that nourish beyond flavor alone.
This is where the journey begins.
Why Olive Oil Needs Rethinking
Science is what allows us to do things differently.
When you buy olive oil today, it's hard to know what you're really getting. Even bottles labeled “extra virgin” can vary wildly in quality—because traditional production often leaves too much to chance. Delayed harvesting lets fermentation start before milling.
Milling for speed or quantity—at high temperatures—damages delicate compounds your body would otherwise benefit from. Improper bottling exposes oils to oxygen, triggering

oxidation that flattens flavor and mimics the pepperiness of healthy polyphenols with the bitterness of spoilage instead. And the waste? It's often discarded, polluting the environment and missing a chance to restore the land it came from.
The truth is, when olive oil isn’t treated with care at every step, the health benefits, the vibrancy, and the trust you deserve are lost.
That’s why we built Avias Ranch differently and we use science to protect what matters most:
- Harvesting when the olives' chemistry says they're ready—not just when the calendar says so.
- Milling with precision, at low temperatures, to preserve polyphenols, aromatics, and vitality.
- Bottling under oxygen-controlled conditions to safeguard freshness and authenticity.
- Turning every byproduct into value, so every bottle you buy helps rebuild ecosystems, not deplete them.
You deserve olive oil that's as nourishing, alive, and honest as it claims to be.
At Avias Ranch, that's exactly what we deliver—because we believe you should never have to choose between tradition, taste, health, and sustainability. You can have it all—in every drop.
What Science Brings to the Table
Olive oil shouldn’t just be delicious. It should do more.
More for your body. More for the planet. More for the system that produces it.
At Avias Ranch, we believe food—done right—can restore ecosystems, rebuild trust, and regenerate health. But that doesn’t happen by default. It happens when we reimagine food as a circular system—designed to nourish, not deplete. Enabled not by slogans, but by science.

We measure soil carbon, map antioxidant profiles, track nutrient outputs, and engineer zero-waste systems that return more than they remove. This is how we translate ideals into action. Because rethinking food isn’t just about good intentions—it’s about better systems, built with evidence.
Too often, food systems reward volume over vitality. Uniformity over nutrition. Extraction over regeneration.
But when we use science to understand what real nourishment looks like—from soil microbiomes to cellular health—we open the door to a different kind of future.
This is the future many food system leaders envision—a future rooted in regeneration, nutrition, and circularity. It’s the path we’re already on.
For us, extra virgin olive oil is where it starts. A single bottle can express:
- The character of the land
- The care of the grower
- The chemistry of wellness
- And the ethics of a circular economy
This isn’t just about premium olive oil. It’s about proving that food can be intentional again—supporting ecosystems, empowering communities, and giving the consumer something that’s been lost: confidence.
What this means for you:
- You’re not just buying oil—you’re supporting a better model for food
- You choose health without compromise, and sustainability without greenwashing
- You help prove that nourishment and responsibility can live in the same bottle
- You support a future where food replenishes what it draws—from people to planet

How We Capture True Quality
Real flavor isn’t accidental. It’s measured, crafted, and protected—at every step.
Flavor this deep doesn’t happen by chance. At Avias Ranch, we don’t guess. We measure. We don’t blend to hide flaws—we compose to highlight character. Every step is intentional—from grove mapping to cold extraction—so you experience olive oil the way nature intended.
At Avias Ranch, every decision begins with insight—knowing the chemistry of our soils, the microbiome beneath our trees, and the moment each olive reaches its peak.
From satellite imaging and in-ground microbial sensors to real-time near-infrared scans of fruit on the branch, we track everything that matters.
Our groves—all our Koroneiki trees across the Notis and Rema Mili Estates—are mapped down to the mineral profile of each plot.
When we harvest, we’re not guessing. We’re capturing olives at the exact moment their oil contains the highest concentrations of antioxidants, polyphenols, and flavor-defining compounds.
The Results:
- Polyphenol levels up to 30% higher than industry average (750 mg/kg and above)
- Acidity consistently below 0.3%, a gold standard of freshness and purity
- Omega-6 to Omega-3 ratio reduced to 4.5:1 (industry average: 14:1)
- Cold extraction at 22°C preserves up to 30% more polyphenols and 15% more omega-3s
- Processing within 3 hours prevents nutrient loss and unwanted fermentation
- Sensory scores 20% above industry average in flavor balance and freshness
Our extraction methods are deliberately slower and colder, prioritizing chemistry over convenience. Every batch is tested using gas chromatography and mass spectrometry to ensure it meets the highest standards in flavor, antioxidant content, and heart-healthy fats.
We bottle under argon, store in oxygen-free glass-lined tanks, and avoid filtration that strips the very things we work so hard to preserve.
What This Means for You:
- More flavor and freshness in every pour
- Higher levels of nutrients that support heart, brain, and anti-inflammatory health
- A bottle that lasts longer without losing its integrity
- Consistent quality you can trust—harvest after harvest

Growing Oils from Living Soil
Good olive oil doesn’t start in the press—it starts underground, in the soil.
Science gives us insight into what tradition always sensed: that soil is not just dirt—it’s alive. And if we want to grow truly healthful olive oil, we have to care for the living system beneath our trees.
That’s why at Avias Ranch, regenerative farming isn’t a catchphrase. It’s a chemistry- and ecology-driven system, built on soil health metrics, microbial monitoring, and agronomic feedback loops.
We regularly measure key soil parameters like potassium, calcium, organic carbon availability, and microbial biomass—capturing a full chemical and biological profile to guide every decision. [View our latest soil health report →]
We avoid tillage to protect underground microbial webs. We use multi-species cover crops to naturally feed the soil, increase water retention, and support tree immunity. We compost pomace to return nutrients to the groves that produced them.
Our groves are rainfed, just as they have been for over 300 years. That makes every drop of water precious—and every farming decision mindful. We've built gravity-fed channels and rainwater catchment systems to work with the landscape, not against it. By preserving natural flow paths and enhancing soil sponge through cover cropping, we reduce erosion, increase moisture retention, and give our trees what they’ve always known: how to thrive on what nature gives.
Beyond our groves, we’re restoring native pollinator corridors, creating wildlife sanctuaries, and integrating rotational grazing to build a biodiverse, resilient farm system.
Every practice—from nutrient application to pruning schedules—is informed by real-time data and designed not just for yield, but resilience.
What this means for you:
-
Your EVOO comes from soil that's measured, protected, and rebuilt season after season
-
You support a farm that farms with insight—not extraction
-
You get an oil that’s a product of balance, not shortcuts

Turning Waste Into New Value
Where others see waste, we see potential—and science brings it to life.
So what happens after the olives are pressed? For us, the science doesn’t stop—it gets more creative.
What others throw away, we turn into purpose.
Pomace isn’t discarded here. It’s broken down, mapped for nutrients, and put to use. Here’s where those reclaimed nutrients go next—into real, tested products that extend our impact far beyond olive oil.
From just one ton of pomace, we recover:
- 25 kg of residual oils — packed with heart-healthy omega-3s and oleic acid
- 6 kg of polyphenols — the antioxidant power of 15,000 cups of green tea
- 400 kg of fiber — equivalent to 13,000 apples
- 18 kg of protein — equal to 50 dozen eggs
- 10 kg of essential minerals — including calcium, magnesium, and potassium
We’ve built an ecosystem of uses:
Agricultural & Nutritional Innovation
- Organic fertilizer for soil restoration
- Nutritional supplements for heart and metabolic health
- Olive-fed livestock improving meat quality and sustainability
Renewable Energy & Social Impact
- Eco-friendly BBQ briquettes
- Alternative fuel in low-resource communities
Personal Care, Reimagined
- Natural soaps enriched with antioxidant compounds
What this means for you:
- Your olive oil supports a circular, zero-waste system
- You help cut carbon, landfill waste, and toxic byproducts
- You’re part of a solution that supports healthier food, cleaner air, and smarter fuel

Measuring What Matters
Most olive oil producers don’t measure impact. We built our system around it.
Our 2024 Impact Report confirmed:
- A 456,399 kg CO₂ drawdown across the estate
- A 30% increase in native pollinators
- 95% fewer synthetic inputs and zero tillage on all olive and herb plots
We use science to track everything from carbon capture to water use, designing a system that gives back more than it takes. Not in theory. In real, measurable numbers.
Carbon-Negative Farming
- Each 500ml bottle removes 4.57 kg of CO₂ from the atmosphere
Water and Soil Health
- Precision irrigation and sensor-driven efficiency
Materials and Waste Reduction
- No plastic, minimal processing, fully biodegradable packaging
What this means for you:
- You’re buying olive oil that’s not just good—it’s climate-positive
- Every bottle you use actively reduces greenhouse gases
- You support a farming model that builds rather than depletes

Choosing Better-What It Means for You
