Our extra virgin olive oil is cold pressed within hours of harvest, with malaxation temperatures kept below 24°C to preserve the oil’s polyphenols, oleocanthal, and flavor complexity. Lower temperatures mean lower yield, but we never compromise. Instead of blending for volume, we craft for character—selecting only the highest-quality lots based on gas chromatography, mass spectrometry, and sensory analysis. Each batch reflects its terroir and is never mixed just to meet a baseline standard.
We store our oil in argon-flushed, glass-lined stainless steel tanks, fully sealed against oxidation. No plastic bottles—only dark glass to block UV and protect purity. Each bottle is flushed again with argon, not nitrogen, providing superior oxygen displacement. Our chemical benchmarks set a higher bar: acidity always below 0.3% (vs. the 0.8% EVOO limit), peroxide values never exceeding 3.4 (vs. an allowable 20), and DPP under 0.5% on a scale where 20% signals decomposition. Polyphenols consistently test above 300 mg/kg, oleic acid exceeds 75%, and our omega-6 to omega-3 ratio stays below 10:1. No machine or mineral oils—ever—unlike many commercial EVOOs.
